The TOTALBalance does not use or require pH probes or pH sensors. Instead, it works at a set rate based on the size of the pool. The instructions will take you though setting this up, as well as making fine tune adjustments within the first week or so. After running consistently, the CO2 infusion in the water reaches a "saturation" point which allows for the system to run on its "CO2 Saver" mode. This process does not create acidic conditions that get can get dangerously low; instead, your fine tune adjustments are largely aimed at ensuring that you are using the minimal amount of CO2 required to keep your pH in range.
This is as opposed to acid injection systems that you mention, which require pH sensors for safety, because without them it is very possible to inject dangerous amounts of acid in the pool. Additionally, pH sensor probes require replacement and are not inexpensive.
